Carb Overload!

For lunch today, I made us nice croissant sandwiches filled with yummy potato salad. Yes, you read it right. It’s basically starch sandwiched between two more pieces of starch. 🙂  It’s not something I’d recommend to anyone on a low carb diet. But it’s super yummy and totatlly worth all the carbs.
